"Delicious Ways to Use Leftover Turkey": We never seem to have enough turkey. Already cooked after the Thanksgiving feast, it is a perfect low-fat addition to sandwiches, pizza, stir-fries, almost everything... Turkey Tortilla Pizzas 1 tsp. ground cumin 1 tsp. garlic powder 1 tsp. chili powder 1 tsp. dried oregano 1/4 tsp. cayenne pepper 2 cups cooked turkey breast meat, cut into julienne strips 5 T. olive oil 1 red pepper, seeded and cut into thin julienne strip 1 yellow pepper, seeded and cut into thin julienne strips 1 medium onion, cut into crescent slivers 8 8-oz flour tortillas 1/2 lb. shredded smoked cheddar or regular cheddar cheese 4 plum tomatoes, seeded and chopped 1/4 cup minced fresh cilantro Combine all of the dried herbs and spices, tossing to blend. Toss the herbs with the strips of turkey and drizzle with 1 tablespoon of the olive oil. Set aside. Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the pepper strips and onion and saute until softened--5-6 minutes. Add the turkey mixture and saute another 2 minutes. remove from heat and set aside. When ready to assemble the pizzas, preheat the oven to 375 degrees. Brush the tortillas lightly on one side with the remaining olive oil. Place the tortillas, oil-side up, on baking sheets and cook in the oven until just beginning to crisp--about 5 minutes. remove the tortillas from the oven and sprinkle each with some of the grated cheddar to cover the surface slightly all over. Divide the turkey-vegetable mixture evenly among the pizzas. Sprinkle the top of each with some of the diced tomatoes and cilantro. Bake the pizzas until the cheese has melted and the tops are beginning to brown lightly--about 10 minutes. Cut each pizza into 6 wedges and serve at once.
